Seasonal Fish of the Week – Hake
Sustainable and delicious, surely Hake should find its way on to our menus more often? However, most Hake is destined for the kitchens of Europe rather than the UK, which is a crying shame as this amazing, white fleshed beauty is brought to us daily from our guys in Shetland and can be delivered to you any prep, any size. Hake can reach 14 to 42 inches in length
Hake resides in deep waters during the day, it swims towards the surface at night to find food Adult Hake have been known to eat their own young Hake are very fast and very hungry…researchers once discovered 75 Herrings in the stomach of a captured specimen!

Roast Salmon with Venus Clams and French Style Peas
This great summer dish is perfect for al fresco dining, or just enjoying with a glass of crisp white wine.
The saltiness of the bacon brings out the freshness of the Venus Clams and cuts through the richness of the sauce.

- 4 160g portions of salmon, skin on
- 200g diced smoked bacon
- 400g garden peas
- 4 diced shallots or 200g baby pearl onions
- 400ml fish stock
- 200ml double cream
- 6 sprigs thyme
- 1 head shredded baby gem lettuce
For the herb crust, combine the herbs, breadcrumbs and butter in a food processor until workable, then transfer on to the skin side of the cod.
Boil the purple potatoes then season and crush lightly with a fork, then toss through the peas and check the seasoning again. Keep to one side for plating up.
Roast the fish in a hot oven for 8 minutes, until just cooked, then place on top of the crushed potato and pea mixture, dotting the salty fingers in and around to provide a salty taste and crunchy texture.
